The short answer: it depends entirely on what you're making.

Pecan Halves

Pecan halves are the whole pecan, split down the center seam. They're the premium cut — larger, more consistent, and visually the most impressive.

Use halves when:

  • You're making a pecan pie and want whole nuts showing on top
  • You're making a salad or charcuterie board where presentation matters
  • You're toasting and serving them as a snack or appetizer
  • You're making candied or praline pecans where each piece should be visible

Don't use halves when you need them to distribute evenly through a batter or dough. Halves in cookies tend to cluster and sink.

Pecan Pieces

Pieces are broken halves — irregular in size, smaller, and significantly more affordable per ounce. They're the everyday workhorse cut.

Use pieces when:

  • Baking cookies, brownies, banana bread, or muffins
  • Making a pecan crumble or streusel topping
  • Adding to granola, trail mix, or oatmeal
  • Topping ice cream or yogurt

Pieces incorporate better into batters because their irregular shape distributes more evenly and holds better in soft textures.

Regardless of which cut you choose, freshness matters more than size. A fresh piece has better flavor than a stale half. The natural oils in a fresh pecan are what give it that characteristic richness — they degrade over time and with improper storage.
